Fresh Pico de Gallo is severely underrated. I honestly can’t get enough of it! Ever since deciding to make a fresh batch for some tacos a few years back, this has become a weekly meal prep staple and is the perfect addition to any and all Mexican dishes made in my house. Whenever I meal prep, I always try to make some version of beans and rice to have on hand for a quick burrito bowl or to throw in a tortilla and having fresh salsa to add is a huge game changer! Not to mention the ingredients are a rich source of vitamins and nutrients to fuel your body and help fight against disease. The recipe is quick and easy to make, and I’m sure you will be glad you took a little time to prepare it!

Here’s a list of the ingredients you’ll need to prepare this fresh salsa:

  • Onion: I use sweet yellow because they have a milder flavor but any kind will work fine.
  • Tomatoes: Romas will work just fine but if you have access to any heirloom or beefsteak, I highly recommend splurging on those because the flavor of a meaty, quality tomato is just unbeatable!
  • Jalapenos: Feel free to adjust the quantity based on your spice preference. Leaving the seeds in will also maximize the spice, but be cautious not to overdue it. I have found that the salsa gets spicier as it sits and the flavors have longer to combine.
  • Cilantro
  • Lime Juice
  • Garlic powder, cumin, and salt

Pro tip: I always try to buy my produce from the local farmer’s market because the quality of flavor makes a huge difference! Plus I love to support my community and the environment, and you can’t beat the piece of mind of knowing exactly where your food comes from.   • 2 medium tomatoes diced
  • 1/2 large onion diced
  • 1 jalapeño finely diced
  • 1/2 cup fresh cilantro
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • juice from 1 lime

Instructions
 

  • Combine all ingredients. Store for up to 7 days.
