Cinnamon Apple Oatmeal

- 2 apples finely diced
- 3 tbsp maple syrup
- 1 tbsp lemon juice
- 2 tsp cinnamon
- 1/4 tsp salt
- 2 cups oats
- 1 tsp vanilla extract
- 1 3/4 cup water
- 1 3/4 cup plant-based milk
Add apples, maple syrup, lemon juice, cinnamon, and salt to a pot over medium heat and reduce for about 8-10 minutes, or until the maple syrup has evaporated and the apples are caramelized.
Add the oats, water, milk, and vanilla and cook for another 5-7 minutes or until desired consistency is reached.
