Ingredients

  • 6 russet potatoes sliced into the shape of fries
  • 1 tbsp avocado oil or olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp pepper
  • 2 tbsp corn starch
  • 1/2 tsp salt

Instructions

  • Add fresh-cut fries to a bowl, submerge in cold water, and let them soak for 5 minutes. Then, using your hand, vigorously shake them around underwater, drain, and rinse one more time.
  • Pat the fries dry with a kitchen towel and lay them on a baking sheet lined with parchment paper or a silicone baking mat.
  • Drizzle them with the avocado oil and season with the garlic powder, onion powder, paprika and pepper and toss well to evenly distribute.
  • Sprinkle the corn starch and toss again, making sure to thoroughly massage it into the fries so you're not left with any powder on the baking sheet.
  • Arrange the fries in a single layer on the baking sheet (you may need two), trying to spread them out as much as possible. The more spread out they are, the crispier they'll get.
  • Bake at 400°F for 25-35 minutes, tossing every 10 minutes, until fries reach desired crispiness. After they're done baking, season with salt and serve.

Notes

Baking time is going to vary based on how many fries are on the tray. One of my trays had fries that were more spread out and these were done baking by 25 minutes. The other needed another 10 minutes, so just keep an eye on them after the 20 minute mark until they reach your desired level of crispiness.
