Easy Vegan Sourdough Stuffing

Delicious, flavor-packed stuffing made with sourdough bread, veggies and savory herbs and spices. This classic holiday side dish is a must-have for any Thanksgiving menu. Vegan or not, this recipe is one that the whole family will enjoy.

Ingredients
  

  • 2 tbsp vegan butter
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 2 tsp dried sage
  • 2 tsp dried thyme
  • 2 tsp dried parsley
  • 1 tsp dried rosemary
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 10 cups sourdough bread cubes (about 1 loaf)
  • 2 cups vegetable broth

Instructions
 

  • Preheat oven to 350°F. Heat a large skillet over medium heat. Add butter and onion and sauté for 1-2 minutes.
  • Add carrots, celery, garlic, and seasonings and sauté another 7-8 minutes.
  • In a large bowl, combine sauteed veggies, bread cubes, and vegetable broth. Mix well to combine.
  • Transfer stuffing to a baking dish, press it down into an even layer, then cover with foil and bake for 35 minutes.
  • Remove foil and bake another 10-15 minutes. When done, the top should be a nice, golden brown.
