This strawberries and cream oatmeal is bursting with flavor and only takes a few ingredients to make. It's the perfect summer breakfast to brighten your morning and fuel you for the day.
Add the strawberries, maple syrup, lemon juice, vanilla, and salt to a medium-sized pot over medium heat.
Simmer the berries for about 10 minutes, or until the berries are well softened and the juices have evaporated, then mash with a potato masher.
Add the oat milk, water, and oats and stir well to combine.
Cook for another 10 minutes on medium heat, stirring occasionally.
Remove from heat and allow it to sit for 5 minutes to thicken.
Notes
If you're using frozen strawberries, they'll just need to be simmered for a longer period. Heat them until they are fully cooked down and most of the water has evaporated.
