Strawberries and Cream Oatmeal

This strawberries and cream oatmeal is bursting with flavor and only takes a few ingredients to make. It's the perfect summer breakfast to brighten your morning and fuel you for the day.

Ingredients
  

  • 1 lb. fresh strawberries sliced *see notes
  • 2 cups old fashioned oats
  • 2 cups oat milk
  • 1 cup water
  • 2 tbsp maple syrup
  • 1/2 lemon juiced
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Add the strawberries, maple syrup, lemon juice, vanilla, and salt to a medium-sized pot over medium heat.
  • Simmer the berries for about 10 minutes, or until the berries are well softened and the juices have evaporated, then mash with a potato masher.
  • Add the oat milk, water, and oats and stir well to combine.
  • Cook for another 10 minutes on medium heat, stirring occasionally.
  • Remove from heat and allow it to sit for 5 minutes to thicken.

Notes

If you're using frozen strawberries, they'll just need to be simmered for a longer period. Heat them until they are fully cooked down and most of the water has evaporated.
