The Best Minestrone Soup

This minestrone soup is hearty, savory, filling, and easy to prepare. Packed full of nutrient-rich ingredients and fresh herbs, this soup has an incredible depth of flavor and will leave you craving more.

Ingredients
  

  • 4 cloves garlic minced
  • 1 medium onion chopped
  • 2 stalks celery chopped
  • 2 medium carrots chopped
  • 1/4 cup tomato paste
  • 10 cups vegetable broth
  • 1/4 cup fresh parsley chopped
  • 4 leaves fresh basil torn to small pieces
  • 2 dried bay leaves
  • 2 15 oz. cans diced tomatoes
  • 1 15 oz. can chickpeas drained and rinsed
  • 1 15 oz. can cannellini or white beans drained and rinsed
  • 1 cup dry shell pasta
  • 2 tsp Italian seasoning
  • salt/pepper

Instructions
 

  • Add onions, garlic, carrots, celery, tomato paste, bay leaves, Italian seasoning and salt/pepper to pressure cooker sauté for 5-6 minutes. (If you do not own a pressure cooker, see notes below.)
  • Add vegetable broth and make sure to scrape off all the bits of flavor from the bottom of the pot.
  • Add remaining ingredients, except for pasta, and cook on high pressure for 12 minutes.
  • Add pasta and cook on SAUTE for 8 minutes.
  • Turn off pressure cooker and remove pot to avoid overcooking pasta.

Notes

Cooking instructions for stove pot: Follow the instructions above until step 3. After adding remaining ingredients, bring to a boil then cover and simmer for 15 minutes. Add pasta. Simmer for another 20 minutes.
