Tuscan Bean Salad

- 1 cup dry barley rinsed and cooked
- 1 15 oz. can chickpeas drained and rinsed
- 1 15 oz. can cannellini beans drained and rinsed
- 1/2 green bell pepper finely diced
- 1/2 red bell pepper finely diced
- 1/4 cup sun-dried tomatoes chopped
- 3-4 green onions sliced
- 2 tbsp fresh basil chopped
- 1 tbsp fresh-squeezed lemon juice
- 1 tbsp white wine vinegar
- 1 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 1/2 tsp salt
- 1/2 tsp pepper
Rinse dry barley and cook according to package instructions. Make sure to add a pinch of salt to the pot of water to boost the flavor.
Once it's done cooking, allow the barley to cool to room temperature. Then, add it to a large bowl along with all other ingredients and mix well.
Store in an airtight container in the fridge for up to a week. The flavor will only get better as it sits.
