Vegan Mashed Potatoes

You only need a few ingredients to prepare these creamy, delicious, vegan mashed potatoes. They're simple, yet bursting with flavor and the perfect comfort food side for holidays, get-togethers, or just your everyday supper.

Ingredients
  

  • 10-12 medium Yukon gold potatoes
  • 1/2 cup oat milk
  • 1/2 cup plant-based butter
  • 1 tbsp salt
  • 2 tsp garlic powder
  • 1 tsp black pepper

Instructions
 

  • Cook potatoes according to your preference until they are fork tender. (See recipe notes for a list of methods.)
  • Mash potatoes using a potato masher and add remaining ingredients. Mix well.

Notes

Cooked potatoes:
Instant Pot: Add potatoes to Instant Pot with a steamer rack and 1 cup of water. Cook on High Pressure for 10 mins. Allow pressure to release naturally for 10 mins, then manually release. 
Stovetop: Boil potatoes for 30 minutes, or until fork tender. 
Microwave: Place potatoes on a microwave safe plate, cover with a damp paper towel, and microwave for 6-8 minutes.
