Vegan Mashed Potatoes

- 10-12 medium Yukon gold potatoes
- 1/2 cup oat milk
- 1/2 cup plant-based butter
- 1 tbsp salt
- 2 tsp garlic powder
- 1 tsp black pepper
Cooked potatoes:
Instant Pot: Add potatoes to Instant Pot with a steamer rack and 1 cup of water. Cook on High Pressure for 10 mins. Allow pressure to release naturally for 10 mins, then manually release.
Stovetop: Boil potatoes for 30 minutes, or until fork tender.
Microwave: Place potatoes on a microwave safe plate, cover with a damp paper towel, and microwave for 6-8 minutes.
