Ingredients
  

  • 1 1 lb. box whole grain elbows
  • 1 cup vegan mayo
  • 3 tbsp mustard
  • 1/2 cup pickle juice
  • 2 tbsp maple syrup
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 pickles diced
  • 3 green onions thinly sliced
  • 1/2 cup red bell pepper diced
  • 1/2 cup corn
  • 1/2 cup peas
  • 1/4 cup red onion diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp crushed red pepper flakes

Instructions
 

  • Cook macaroni noodles according to package, then drain and rinse with cold water.
  • Add noodles to a bowl along with all remaining ingredients and mix well.

Notes

Store in airtight container in fridge for up to 7 days.
