Whether you’re a fan of tofu or not, I can guarantee this tofu scramble will not disappoint. I honestly never thought I would enjoy tofu, but now this is by far one of my favorite things to make for breakfast and a great source of protein, veggies and herbs to kick start the day. You can always bulk it up by adding potatoes or making it into a breakfast burrito or breakfast tacos, or even eating it on some avocado toast! The possibilities are endless. Hope you enjoy!
Below is a step-by-step tutorial of how to prepare this scramble, with a full recipe summary at the bottom of the page.
For this recipe, you’ll need the following ingredients:
- 1 package of extra firm or super firm tofu (I prefer super firm since I don’t have to worry about pressing the liquid out)
- 1/2 red bell pepper, diced
- 1/2 onion, diced
- 4 mushrooms (you can use any kind, really)
- 2 green onions
- 1 medium tomato, diced
- 4 cloves minced garlic
- 1/2 tsp no-salt seasoning
- 1 tbsp nutritional yeast
- 1 tbsp liquid aminos
- 1/4 tsp turmeric
- salt/pepper
Step 1:
Gather your ingredients and start chopping! If I’m using extra firm tofu, I like to press it while I’m preparing my veggies by wrapping it in a hand towel and setting a heavy object on top since I have yet to invest in a tofu press.


Step 2:
First, add the onions and garlic and water sauté for 2-3 minutes. Then, add the remaining ingredients and cook on medium heat for 10 minutes. As the tofu heats up, the turmeric will make the tofu turn more yellow, giving it “eggy” look. You’ll know it’s ready when the veggies look nice and tender. That’s it! Go ahead and serve.

Tofu Scramble
Ingredients
- 1 pkg extra firm tofu pressed and crumbled
- 1/2 onion diced
- 1/2 red bell pepper diced
- 2 green onions chopped, whites and greens separated
- 4 cloves garlic minced
- 4 mushrooms chopped
- 1 tb liquid aminos
- 1/2 tsp no salt seasoning
- 1 tb nutritional yeast
- 1/4 tsp turmeric
- salt/pepper to taste
Instructions
- Press tofu to remove as much liquid as possible.
- Heat a large skillet over medium heat. Drizzle with olive oil or add a splash of water, then add onion, bell peppers, garlic, and the whites of your green onion. Sauté for 2-3 minutes.
- Add mushrooms, green onion greens, liquid aminos and seasonings, along with crumbled tofu.
- Cook another 8-10 minutes, or until veggies have softened.
