I don’t know about you, but I’ve never celebrated the holidays without a side of mashed potatoes, so creating the perfect recipe was a must. They are a staple side dish and the perfect go-to when you’re craving something cozy and satiating. Drizzle them in delicious gravy, or enjoy them as they are, but either way I hope you love them as much as we do!

- Yukon gold potatoes: These are my go-to when it comes to mashed potatoes because of their buttery, creamy texture. While potatoes are pretty low on the scale of nutrient density, they do have some benefits. They contain lots of antioxidants like Vitamin C and are high in fiber so they’re good for your digestive health.
- Plant-based butter: There are no nutritional benefits that come from adding alternative butter, but it is necessary to achieve the delicious, creamy texture you’re looking for.
- Oat milk: Oat milk is my preference for mashed potatoes because unlike other plant-based milks, it has a mild flavor and doesn’t alter the taste. All plant-based milks contain a variety of nutrients, but oat milk in particular is a great source of protein, fatty acids, vitamins and minerals and has been shown to reduce blood sugar, lower cholesterol, and help protect against cancer.
- Garlic powder, Salt/pepper: In addition to the amazing flavor they bring, there are added benefits when it comes to including spices in your recipes. For that reason, it’s important to include at least a small amount of herbs and spices in your daily diet.

Step 1:
Cook potatoes according to preference until they are fork tender. If using an Instant Pot, just place potatoes on a steamer rack and add 1 cup of water. Cook on High Pressure for 10 minutes, then allow it to naturally release for 10 minutes before venting.
Step 2:
Mash potatoes using a potato masher.
Step 3:
Add remaining ingredients and mix well.

- 10-12 medium Yukon gold potatoes
- 1/2 cup oat milk
- 1/2 cup plant-based butter
- 1 tbsp salt
- 2 tsp garlic powder
- 1 tsp black pepper
Instructions
