I have to admit, I kept seeing recipes for cabbage steaks for several years with very little interest in trying them, until one day I decided to give it a try and OH MY GOODNESS. I can’t believe it took me so long to make these. Cabbage is probably the most underrated vegetable in my opinion and there are so many ways they can be prepared and incorporated into recipes. Just simply searing and roasted them with a little butter and seasoning can make for the most flavorful and satisfying entree or side. Since testing this recipe, I’ve made these cabbage steaks just about every week or two and just can’t get enough! They are so incredibly delicious and satiating.

Step 1: Preheat
Start by preheating your oven to 400°F and preheat a large cast iron skillet on the stove over medium heat.
Step 2: Prep cabbage steaks
Cut a head of cabbage into 6 wedges. Generously season both sides of each wedge with salt, pepper, garlic powder, onion powder, and smoked paprika. Rub the seasoning into the cabbage steaks to help get all the flavor inside those layers.



Step 3: Prep garlic butter
Prepare the garlic butter by mixing the softened or melted butter with the minced garlic, dried parsley, and a pinch of salt in a small bowl.
Step 4: Sear steaks
Add a drizzle of oil to your preheated cast iron skillet and place your cabbage steaks in, cut side down, and sear for 2 minutes. While they’re cooking, use a basting brush to coat the tops with the garlic butter. Then, flip the steaks and sear the other side for another 2 minutes. Baste the other side with the remaining garlic butter.
Step 5: Bake
After searing both sides on the stove, it’s time to let them roast in the oven. Carefully transfer your cast iron pan to your preheated oven and bake them for 30-35 minutes, or until they have a good char and are nice and tender.
Once they come out of the oven, they are ready to serve immediately. Leftovers can be stored in the fridge for up to 5 days. Don’t own a cast iron skillet?
Any stove and oven safe pan will work for this recipe. Most stainless steel pans are oven safe up to 500°F, but always make sure to check the manufacturers markings or users guide to be sure. If you don’t have any cookware that is both stove and oven safe, you can just transfer the cabbage steaks over to an oven-safe pan after searing on the stove. Although, I highly recommend investing in a cast iron skillet if you don’t already have one because they are the best, most durable, non-stick pans available and will last for generations. Roasted Cabbage Steaks
Equipment
- cast iron skillet or other stove and oven safe pan
Ingredients
- 1 head cabbage cut into 6 wedges
- garlic powder
- onion powder
- smoked paprika
- salt
- pepper
Garlic Butter
- 4 tbsp butter softened
- 1 clove garlic minced
- 1 tbsp dried parsley
- pinch salt
Instructions
- Preheat oven to 400°F and heat a large cast iron skillet over medium heat.
- Generously season both sides of each cabbage wedge with garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the seasoning into the cabbage steaks to help get all the flavor inside those layers.
- Prepare the garlic butter by combining butter, garlic, dried parsley, and salt in a small bowl.
- Add a drizzle of oil to your preheated cast iron skillet and place your cabbage steaks in, cut side down, and sear for 2 minutes. While they're cooking, use a basting brush to coat the tops with the garlic butter. Then, flip the steaks and sear the other side for another 2 minutes. Baste the other side with the remaining garlic butter.
- Transfer the cast iron skillet to your preheated oven and bake for 30-35 minutes, or until the cabbage steaks are well-charred and very tender.
